We were just in Oregon and stopped by the Rogue Creamery.  They make the best bleu cheese I've ever tasted!  I had no idea there were different types of bleu cheeses - there are six different kinds. Echo Mountain, a blend of goat's milk and cow's milk, was my favorite.  It has a rich, creamy texture with an extraordinary taste!
